I ABSOLUTELY love this time of year! Leaves are changing into beautiful colors, air is a bit brisk and the pumpkins seem to be everywhere! I love going to local farmers markets and seeing all the seasonal veggies and fruits … butternut squash, acorn squash, fresh apples and pears just picked…! I think “for the love of god I MUST MAKE SOMETHING!” So that’s what I have been doing. Besides the butternut squash, roasted root vegetables, and broccoli and potato soup that I have made, I decided I needed to make something out of those big beautiful pumpkins. And what a treat for Halloween!
My troops and I have put together this special fall pumpkin cookie recipe just for you to enjoy! SOOOO very delicious and full of Fall!!
Pumpkin Oatmeal Cookies with Maple Glaze
Cook at 350 for 20-22 minutes (until tops brown and crispy on top), cookie sheet covered with parchment paper
Ingredients:
1/2 cup brown rice flour
1/2 cup sorghum flour
1/4 cup sweat rice flour
1/2 cup almond flour
1 tbls tapioca starch
1/2 cup certified organic gluten free oats
1 tsp xanthum gum
1/2 tsp salt
1 tsp baking soda
1 cup maple sugar or date sugar (brown sugar is an option if do not have access to other)
1/2 tsp nutmeg
1/2 tsp ground cloves
1 tbls vanilla
1/2 cup Earth Balance or Vegetable shortening
1 cup pure pumpkin puree (organic canned or home-made)
Directions for Cookies:
Add all dry ingredients together and stir with whisk, breaking up any lumps
In a standing mixer or hand mixer add shortening or Earth Balance and vanilla to dry mixture for 1 minute
Add pumpkin puree until combined
Fold in nuts if you choose (pecans or walnuts would go great!)
Spoon out tablespoon size ball of mixed dough and place on the parchment covered cookie sheet and place in oven
While waiting for your delicious cookies prepare your Maple Glaze
Ingredients for Maple Glaze:
5 tsp maple syrup
4 tsp almond, rice, hemp, or soy milk
3 tsp rice milk powder or soy milk powder
1/2 tsp lemon juice
splash of cinnamon
mix all these ingredients with spoon until combined
Finally, when cookies are finished drizzle the Maple Glaze on tops of cookies. Enjoy these cookies hot right of the oven with a scoop of ice-cream, over a cup of tea, or with some hot chocolate – all gluten free and dairy free of course!

I think I may have Celiacs, but even if I don’t , I have to eat like I do. No coincidence I saw you that day on TV. Thanks for sharing and helping others.
No such thing as coincidences. We are exactly where we are suppose to be. We have to make the best with what is. A gluten free life is not so bad, trust me. Different yes but HEALTHIER and thats what matters. I will keep posting helpful hints and recipes to help you along this new road.

I’m so glad I saw you on Dr. Oz. I just happened to be home and in front of the TV on Monday. I just love the way that the Cosmic Flow brings you just what you need, exactly when you need it. I was diagnosed with Crohn’s disease when I was 25 and have had multiple surgeries eventually leading to an unreversible ileostomy. I felt a little better, the debilitating pain was gone but other symptoms persisted. Bloating, arthritis, moodiness, weight swings from barely weighing 80 pounds to ballooning to over 200 pounds and back again in a matter of weeks, etc, etc. I have always known that there was something more going on. Unfortunately once the diagnosis of Crohn’s had been made it seemed that EVERYTHING was blamed on it, and I was told to learn to live with it. Over 22 years of surviving, but certainly not LIVING! I am now trying a gluten free existence and the fog is starting to lift. I will continue to search for a physician who will properly test me, but until then I plan on continuing along this path for as long as it makes me feel better. Thank you for your recipes and insight. I look forward to your recipe book. Hopefully, with more and more people speaking out, this condition will become recognized and it will be easier to find gluten free products. I look forward to feeling healthy again, and am hopeful that I might be able to wean myself off of all these prescriptions that I currently take. I really appreciate you coming forward to talk about this. Thank you for being so brave!
Your story has made me scream all around my apartment!!!!!!!!!!!! I am ill that NO ONE told you to eat gluten free with a diagnosis of Crohn’s disease! It is absolutely infuriating to me. I am so very sorry for the hell you have been through. I totally understand. You are far braver than me though. I want you to take your health into your hands and stay away from the GLUTEN! You demand a Celiac test from your doctors. An endoscopy is the only true way to find out. With or without a diagnosis please eat wisely. I can almost bet that a lot of your aches and pains and BRAIN FOG will go away.
So you know you are not alone, a friend of my family was diagnosed with Crohn’s many many years ago and suffered greatly. He was even on chemotherapy drugs for two years that did not help and was ready to have the surgery you had. It was at the same point that i had been finally diagnosed with Celiac. My mother told him of this finding in me and suggested he get tested. He argued with his doctor to give him the test. The doctor said he didn’t need it. The man went to another doctor who did. Not only did he most definitely have celiac disease but he never had Crohns!! My point of this story is please don’t stop asking questions. Its your health and your life and you deserve to live your best life!!!!

Actually endoscopy isn’t always successful in diagnosing ciliac. Unless the physician understands exactly where to biopsy, the patient may receive a false negative result. As a nurse I have met patients who were told they did not have ciliac only to find out a few years later, after enduring more pointless suffering, that they do in fact have ciliac. One of the best ways to test for ciliac or a gluten intolerance is to eliminate gluten from your diet for at least a few months. I can’t wait to buy your recipe book. I appreciate your efforts in increasing awareness about ciliac.
Thank you so much for all of your information. My son is allergic to gluten, corn, tomatoes and CHOCOLATE!!!!! Poor guy! I have only checked out your blueberry scone recipe (looks wonderful!), but would you be willing to provide some without any corn~type fillers, like cornstarch or corn protein or anything like that? So many gluten-free products on the market have those things in them. I would love it if he could have a pretzel, but he can’t because they all have corn in them as a substitute for wheat. Go figure!
I can’t wait to see your cookbook. I have purchased a few cookbooks for him, but most recipes do include a lot of corn.

Jennifer, thank you so very much for getting the word out about Celiac Disease and the dreadful gluten. I was diagnosed 3 years ago and it is hard when I am the only one living GF out of our family of 5. I really only had 2 symptoms before I was diagnosed, as a matter of fact, I had never heard of Celiac Disease before. The symptom that sent me to my gastroenterologist was this globus feeling like something was stuck in my throat and it wouldn’t go away. It was only after he scoped me and said my small intestine was abnormal, that he order the lab work for Celiac. I was a weak positive but he said that it is GF for me. After that it was hit or miss with the products I tried. If I happened to eat something that contained gluten, I became the wicked witch of the north, south, east, and west mixed together with the evil step-mother, evil queen, and pretty much any other mean and nasty fictional person you can think of! My poor kids were scared of me when I accidentally ingested Gluten. It still happens today if I come across Gluten. If possible, could you please email me because I have questions that have come since I read your story. I know you are busy but I do need some advice aboutva few things. Thank you and God Bless!!!
