My new love! Chicken salad on The PURE wrap!!!!

A long time ago I did a movie involving vampires and although it was not one of my finest moments I did discover something on that set that I thought was fantastic! A kraft service lady would take a banana, peanut butter, rice crispy’s, a little bit of honey and some chocolate syrup and roll it all up in a tortilla. She would cut it up and bring it to set when we were working nights. And every little pop of these things in your mouth was crunchy and gooey and oh so amazing! I loved them! Then in the morning she would bring breakfast wraps. Everything in this little simple wrap. I was hooked and was on a wrap kick- you could throw anything in these wraps and it was delicious and easy! 

Well… unfortunately, as most of you know, wraps are a thing of the past. Yes, I know there are some gluten free wraps but none that I can recommend, especially the ones that are made out of corn… since corn just turns into sugar I choose not to eat it. 

HOWEVER!! The reason for this new blog post is because I just discovered my new favorite thing! It’s called the Pure Wrap and made from nothing but coconut. I know I have talked about coconut before on the blog but if you missed it coconut is packed with nutrients and is good for you in so many ways! Good for your bones and immune system, reduces inflammation… I could go on!

I found these wraps and what they are made of is rolled out coconut meat and water, making the most amazing wraps!! So in the kitchen, with both Troops in hand, I made a sun-butter, honey and banana wrap and it was like the old days on set when I ate without much caution. Which is precisely what I’m about these days – bringing back the tastes of yesterday and making them so I can eat them today! I always feel a little bit of a victory when I am able to do that. I wont allow this disease to stop me from enjoying my life and reminiscing in my memories of yesterday.

I highly recommend these wraps!

So, on a wrap kick again – I created this delicious chicken salad I would like to share and hope you will try, whether you put it on the Pure Wrap, an english muffin or something else. But these Pure Wraps work great and are perfect for kids because there is so much you can do with them. They will remind you of yesterday which makes me so HAPPY!!

Chicken Salad Wraps

Ingredients:
2 cups shredded organic chicken
1 celery stalk chopped
1 carrot shredded or thinly sliced
1 1/2 very ripe avocado
1 tbls fresh squeezed lemon juice
1/3 cup olive oil
salt and pepper
2 Pure wraps 

Directions:
1. Take shredded chicken and combine with very ripe and smashed avocado mixing with fork.
2. Add in celery and carrots.
3. In a separate bowl add lemon juice and olive oil and whisk until thick.
4. Pour over chicken avocado mixture and mix up, add a splash more olive oil, salt and pepper to taste.
5. Scoop the chicken salad into the wrap, roll it up and ENJOY!!!!!

    I just recently was told to go gluten free by my doctor, not for celiac’s but for Hashimoto’s, a thyroid autoimmune disease. In the last three weeks that I have been eating no gluten, I have seen an amazing change in my quality of life. I am thrilled to have found your delicious blog. I am so unfamiliar with gluten free products. I mostly like to make things from scratch, so learning the chemistry of new flours and additives will be an interesting challenge. Your chicken salad sounds delicious.

      HI I have hashimoto’s also and have not heard about gluten free for that. Can you talk a little about your dr’s reasons etc. Is it because celiac and hashimotos are both autoimmune diseases? I come to this site for my daughter and her gluten issues.

    Jennifer what a God sent you are! I saw you on the Wendy Williams show this morning and have always enjoyed seeing you whether on Tv, or the movies. You are a wonderful and beautiful actess!

    I have been living with Fibromyalgia for over ten years now and can’t help but think with all the research that I have done that, both Celiac and Fibromyalgia are connected.
    I like the way that you not only thought of the gluten , but so happy to see you also cared about the the sugar as well in your recipes, as I have diabetes.
    I do like Agave sweetern, curious if you will be using it in any of your recipes?

    I was so happy to see you on The Wendy Show! I’ve been dieting and exercising but loosing weight very slow. I am also into the wraps. After reading more about Gluten I can’t wait to start this, I believe this will help me tremendously. Your Chicken Salad recipe sounds great. Can’t wait to try your products (choc chip cookies) I hope you will be selling online.I will keep you posted on my change. Good Luck with everything!

    OMG awesome, what lacks in so many suggestions and products for Celiacs *gluten fre 2 years and 47 pounds lost and counting, is that some of us have other conditions that are becuase we are in fact Celiacs. Although Celiacs has been around and diagnosed overseas for decades and discovered by Dutch Dr. and noted it is still MOCKED here in the United States and not understood so we desperatly need someone who is a full blown geniune Celiac who understands that we want cookies not the cups of sugar added to them. That we want variety and to be able to bake but not with 400 mg of sodium in 1 tablespoon. I cook and cook and do not add any suger or salt to my food bc it has it in it and let me tell you it tastes just fine. I get Applegate cold cuts at Fairway they even ordered the no salt added Turkey for me special but I eat it on salad or by hand wrapped in cheese. HAVING THESE WRAPS IS BEYOND AWESOME, I have tried brown rice wraps from 2 diff companies that are good but they are brittle and either 2 small or 2 large and provide to much carbs. Having something from something natural nutritious is a joy. JOINING opensky.com NOW. I also live in NY and eagerly await ur shop where I know I will be able to walk in depending on the diligence of training of the staff to eat anything I want and NOT WORRY :) again THANK YOU FOR SPEAKING OUT FOR THOSE OF US WHO DO NOT HAVE A VOICE AND ARE DISREGARDED BY DOCTORS.

    im a gestational diabetic btw. ive had to do nutrition as well. im also 46 and six foot tall. im mostly indian but look my scotish side so i bruise to the touch. everyone has thought my kids and i were enemic, but 14=16 is normal as adult, mine is always 18.4-.8. its like bruising is our patching since we are so white and supposed to be so red. it is important, the darker you are, the less pigmentation you have i have white skin yet no pigmentation.lol i feel fatigued so much. ill be cutting some gluten where i can, until im told i have to get rid of it all. free foods are my favorite. i can eat onions peppers and beans all day long. thats also something most people dont know, cholesterol is a glue i believe too. you eat corn and peas, they come out same as they go in even though you know you chewed. those are the worst vegys there are, they are full of cholesterol. broccolli is a watch how much you eat also. every veg n fruit have their own good for you properties, so its better to eat small assortments of many rather then alot of 1. even colors matter. each color of a pepper has its own benifits, green colon, red heart, orange and yellow even have different ones but i forget at the moment what they are. i love my organic mini sweet peppers. i also like cabbage, yum! i also suffered gall bladder disease my whole life. it exploded in 95. my case my dr told me would be in the books. i had the worst ever seen and i lived thru an explosion of the gall bladder. at that time i was one of seven that lived thru it. i had a stone the size of a softball. my surgical nurse asked to keep my specimen.lol hope your doing well, cant wait to read more. i seen you on dr oz this week and you mentioned ur site. i always watch you on bb as well.

    Nice web site…

    Do you have any salsa recipes? I imagine salsa, guacamole …etc. with some chicken would make a nice wrap.

    Have you tried creating a pizza dough? I would think if you could do that, then freeze small portions of dough …use them when you need them. Top the small pizza pies with fresh vegetables, tomato paste, meat, chicken …etc. Pop them in the kitchen oven.
