The Troops and I put together this delicious and healthy buckwheat pancake recipe – a great start to your weekend!
Buckwheat Pancake Recipe
Ingredients:
1/2 cup buckwheat flour
1/2 cup brown rice flour
1/4 tsp salt
1 egg
1 cup water or milk of your choice (rice or almond or…)
2 tsp canola oil, melted Earth Balance (gluten, dairy, and soy free!) or real butter if you can have dairy
1 1/2 tbls honey
1/2 tsp cinnamon
1/2 tsp baking soda
1 tsp baking powder
splash of vanilla
*adding a pinch of freshly grated nutmeg is also great!
Directions:
Add dry ingredients together and whisk to break up clumps.
In separate bowl whisk egg with water or milk and honey.
Then add wet ingredients to dry ingredients mixing until has smooth texture. You can also add more water or milk if you prefer a thinner pancake.
Pour batter onto a hot skillet or pan well coated with olive oil or butter until you start to see small bubbles then flip.
You can top with nuts, blueberries, maple syrup or whatever your heart desires. Enjoy – the Troops and I did!!

This morning I actually took the effort to make these pancakes, and I have to say they tasted incredibly awesome. However, I did add a little more honey and cinnamon for my own personal preferences. Lastly, they took only minutes to make. Simple recipes that take only minutes to make that have real ingredients and true nutrition are perfect for busy professionals and entrepreneurs. Also, this recipe is perfect for men who are clumsy in the kitchen like me!
One does not have to have celiac disease in order to feel pain and discomfort from gluten. People who are suffering from digestive disorders of many different types would experience the benefits of eating foods that are gluten-free. The digestive system has to work very hard in order to break down gluten, which means having to produce more acid in the stomach to break down the gluten. Easier digestion results in positive, healthier results for all walks of life.

One of my best friends was diagnosed about a year ago and my friends and I have been trying to support her by including gluten free dishes at all of our parties and get-togethers. Her baby shower is this weekend and we’re doing it breakfast style so I’m happy to find this recipe in time!

I have noticed that many of your recipes use rice flour, and I am allergic to rice, corn, soy and garbanzo (pea) as well as Celiac. Do you have any substitution suggestions I can try. I am not quite as brave as you about just jumping in and trying baking recipes. So far I just go without anything resembling bread or baked goods and have been doing so for about two years. I would really appreciate your input.
